I was given some farm fresh milk today and I want to make cottage cheese. I use to make it about 20 years ago when we lived on a ranch and had our own milk cows. But i am having trouble remembering how I did it.

So I need some help.

Thanks, Elinor

Sorry am at work right now, but There are a bunch of different ways to make cottage cheese. For me the way my husband likes it best, is making colby cheese, and after letting it set with rennet in it, then cut and heat to about 95 degrees, then drain it. He thought it most tastes like boughten. He does not like the sourness of it in other recipes.
Good luck

You can Google 'making cottage cheese' and several sites come up. Mother Earth News, Kentucky extension service, to name a couple.

We use to make cottage cheese when I was a kid also, but I think we just let the milk clabber and then heated it and then put it a pillow slip and hung it from the clothes line. But like so many other things if you don't use it you lose it.

Good Luck with your cheese making, only hope you can use the information.
