I would love to hear everyone's favorite easy veggie recipes: salads, raw, cooked or whatever you like.
Mine... I love to make a raw cucumber or zucchini sandwich on sourdough. I put a tiny bit of mayo, a little salt, lettuce and cucumbers or zucchini. It is one of my most favorite easy things to make. Sometimes I add tomatoes too!

I like to make my own "burgers". I start with beans & rice, usually black beans, mix in some cornmeal & egg to hold it together. Add whatever seasoning I feel like & maybe some cheese as well. Then, I heat some olive oil up in a skillet & cook it like a burger. Way better than the frozen ones you get at the store. :)

This one has pasta and sausage, but it's still great. I use turkey sausage - the kielbasa style - slice it and brown it in the skillet, then add a bit of stock to let it cook. Cook about 2 cups of penne pasta until done. Add the sausage, juice, and pasta together. Meanwhile, heat the oven to 400 degrees. Dice up zucchini, yellow squash, onion, bell pepper, fresh mushrooms, and drizzle with olive oil. Add salt and roast for 15 minutes. Turn them all over, add cherry tomatoes that have been halved, drizzled in oil and salted and cook for another 15 minutes. Dump all of this in with the pasta/sausage mixture - roasting juices and all. Sprinkle with a bit or parmesan cheese if so desired and enjoy. It's a complete meal in a bowl and only takes about 40 minutes - most of that being the prep time of chopping all the veggies. It's worth trying!

After posting this I realized people will probably read my post as "vegetarian" recipes. I really did mean any recipes using veggies. I am asking for ideas because I just joined a CSA and have veggies pouring out if my refrigerator right now. I need quick, yummy veggie recipes to use them all up.

Stir fry. Use little olive oil and toss everything in. I stir fried kale this evening--whatever grows in the garden. Add herbs, cooking wine, whatever you have. I use my iron skillets for stir frying.
