We made a batch of homemade ketchup this past fall. It didn't come out as thick as we think it should have. What did we do wrong?

I made a batch of homemade ketchup about two months ago, I used the Mrs. Green's packet. It came out very watery and chunky. I understand your pain

Fannie-it is just a matter of letting it simmer down to the consistancy you want before canning. Even though the canning books say simmer for an ammount of time sometimes it takes longer. Not all tomatos have the same water/juice as each other. Next time just cook down a little longer.

I want to make lots of ketchup this summer. I've been buying organic and it's a bit high. So hopefully I will get nice ripe tomatoes before the chickens get to them.

Can you please post your recipe, Fannie? Thanks so much.

And what kind of tomatoes make the best ketchup? I will be getting more plants so this would be helpful to know what kind are better. Maybe Roma?

Paste tomatos are what you need to make ketchup. The recipe I use is the one in the ball canning book and it is good.

Kris, we use roma tomatoes. We use Mrs wages packets. But I do have the Ball canning recipe for the ketchup also. Thanks Miss Lily for your help. I guess a little simmering is what I will have to do.

I would be interested in making ketchup.. I have the ball canning book, I will check out that recipe!

But, I make my own bbq sauce. I make it with jack daniels, so it has a kick to it. but, it's real good. and I usually let it simmer for a long time until it gets to a thick paste. then I can it. or put it in jars.

One of my favorite memories from high school, is a weekend that we spent at The Breuderhof (not sure if that is spelled right) in Reston, NY which is a community of Christians who originally fled from Nazi Germany. Anyway, anyone who visited the community had to help with the work and while my dad worked in the wooden toy factory, my sisters, mom and I wound up at the ketchup kitchen, peeling tomatoes to go into the biggest copper kettles you ever saw to simmer down to ketchup. All day we peeled blanched tomatoes, drinking in the aroma of cooking tomatoes. Now, when I can tomatoes, that smell gives me visions of sitting in a chair, surrounded by women with a never-ending supply of warm tomatoes!! :-)

Tomato ketchup gives me a tummyache, so my MIL made me peach ketchup this past summer! It is very good, but really different on your burger! :)
