Hey everyone! Just wondering if anyone has any good recipes to make homemade pierogies, or pizza rolls, or pizza's that are made with healthy ingredients to freeze ahead of time so I can stock up and not have to buy the chemical filled store bought stuff? Any other types of kid friendly frozen food ideas are welcome too! Thanks!

My hubby found this pizza crust recipe that we love. We use whole wheat flour and add our own sauce and toppings. Our sauce is just our homemade, home canned spaghetti sauce run through the blender.(We like our spaghetti sauce extra chunky!)
I'm not sure how it would do frozen, but it only takes a few minutes to make and a few to rise if you put it under a heat lamp.

It's good for calzones and 'Hot Pockets' too. We love leftover spaghetti wrapped in it like a hot pocket with shredded cheese! Super Yummy!!

When I do frozen pizza I freeze the crust on a cookie sheet when the disk is frozen then I put the sauce on and refrezze on the cookie sheet. When the sauce is frozen then I wrap and date. I don't like freezeing veggies or cheese on them because they get soggy... Besides then I can customize it depending on what needs to be used up or what is fresh from the farmers market. Also if I get a chance I make my own cheeses and those never like to be frozen. Hope that helps.
I find that if I have veggies chopped, cheeses grated, canned sauces in the cupboard - a fast meal it in minutes and no gas used, time in lines and who knows what in the food...

Cecily, I make my own chicken nuggets! My grand children- ages 9 down to 4 months old actually prefer them over the ones you can buy in the grocery store. They're very easy to make. Cut up either chicken breasts or all dark meat- whichever you prefer- into about 1 " chunks(about 1 1/2 - 2 lbs.). Melt a stick of butter and coat the chicken pieces with that. Mix in a bowl: italian style bread crumbs, parmesan cheese, garlic powder, black pepper, and paprika, coat chicken pieces with this mix. Bake on a lightly greased cookie sheet at 375 until done. Some of the kids like them crunchy, some like them just barely done. I'm sorry I don't have measurements, I pretty much just wing it, but if you need measurements, I can get them for you! Sometimes I coat the pieces in the butter, then throw everything in a big baking dish and mix it up like that! Bake in the same dish. I make my home made mac and cheese to go with them, serve with green beans, and everyone is happy- adults too!

Our favorite frozen ahead meal is Cranberry Chicken. 4 frozen chicken breasts, a can of whole cranberry sauce, an envelope of dry onion soup, half a bottle of french dressing, about a tablespoon of worcestershire. I put everything but the chicken in a gallon freezer bag, smoosh it together well, plop in the chicken, smoosh is again and toss it in the freezer. Take it out to thaw in the fridge the day before, put all in a baking dish and bake at 325 until those breasts are done. The cheap breasts I buy take about 35 minutes to cook through, which is just about the exact time it takes my brown rice and broccoli to cook for the sides. I always make two bags at a time (uses up the french dressing) so if I have company coming I can pull out both bags.
Prayer costs nothing, but is worth the most. |

Oh and the kids love when I make mini-meatloafs in muffin tins. Fish nuggets, made just like Brenda's chicken nuggets. Leftover chicken gets cooked up with taco seasoning (I just use cumin, chili powder, and a little flour) and then package it in quart size bags to put on quesadillas when I work late. Super yummy if you have homemade salsa on the side and an avocado to boot. My 9 year old will make his own "nachos" using that chicken as a topping with cheese, lettuce, salsa, etc.
