I love to can. I even keep my canner in a quick reach place so that I can process leftovers like soups, stews, meats, etc. right after dinner. Since there's just two of us, I cook like there are the former 6 of us and then can the leftovers! Am I weird?

I just put up a new blog post on how to can sausage if you are interested. It is awesome to have canned sausage in the morning to just plop in the skillet, fry up quickly and have ready in a pinch.

People have been canning sausage since the very old, old days and it is a wonderful way to keep it without clogging up your freezer!

This is very interesting!! I am going to try this...I like to have canned things on hand...and I never thought of sausage!! Great idea for a fast meal!

I am right there with you. I have my canning stuff sitting in the kitchen. Of course, it would be better put some place than the trip hazard it is.... but I am using it weekly, sometimes daily! It's wonderful to see the pantry stock grow and rarely have to buy canned foods at the store!

Is there a 12-step addiction program for canners? Cuz, I think I may need it one day. But, I can quit anytime I want...... lol

Debbie, we actually had some for breakfast this morning. It is very, very tender and so it makes awesome biscuits and sausage as a quick breakfast on the run!

Angie, I don't know that I've seen a program, but just know that admitting you have a problem is the first step! :-)

I canned corn beef the other day. And then the broth when I ran out of the meat. I have no IDEA what to make out of just the broth. There was room in the canner and I didn't want the broth to go to waste.

You are always inspiring me to pull out my pressure canner. Work (including my yearly, ick 20 hr in a hotel conference room continuing ed) continues to get in the way of my canning ventures!!
I will be on the lookout for sausage (& chicken) to can, & will update when I have some pretty jars sitting on my table!!
Keep those canning posts coming! I, for one, will be all over them (as hubby says), like a rat on a Cheeto!

Corned beef broth is great to pour in a fryin pan and add some carrots. Cook till tender then add some chopped cabbage. Cook until tender and serve with mashed taters! It's awesome! My family cleans their plates when I make that!

I use broths for base in everything. Whenever you cook a grain. Instead of water I use the broth!
