Hey Farmgirls,

Now that are hens are back in production with the warmer weather we are over run with eggs. Such a glorious thing to see in our fridge, but what to do with them?

Quiche, Quiche Quiche...If you have a favorite Quiche receipe...share it with us please!

Tonight I made a bacon, spinach, swiss cheese and onion version. Had a tough time with my crust.

I don't have a specific recipe but I LOVE to add sauteed green onions (mostly the white part) and cumin to the eggs with some cheese. There is something about cumin and eggs that I really, really like. I look forward to the yummy recipes that are to follow:)

I do not use crust in my borrowed recipe. You can see the recipe here:

It is so easy, and so delicious. We eat it several times a month. You can add anything you want to it. Sometimes I use browned sausage in the bottom. The other day, I added in asparagus. It's a great recipe.

Danielle, you can find my favorite recipe at http://www.oklahomapastrycloth.com/blog/?p=1252 My pie crust recipe is also linked there to the post with the recipe. My pie crust recipe makes enough for several pie crusts and you can keep the mix in the freezer or frig and dip out as you need to make crust. It is really flaky. I love quiche and could eat it everyday!!

Danielle, I whip up about a dozen eggs and place them in the freezer. When I am ready to make quiche, I just thaw them out and add to the recipe. They taste the same.
