Maybe a silly question here, but can you can homemade chicken broth? I have been cooking chicken legs and thighs today to shred and I usually freeze my broth, but I was wondering if I could can it instead and open up some freezer space. I keep wondering if there would be an additional bacteria issue that you don't have in canning other items that you might have with the chicken broth? Any thoughts.....

All broths are safe to pressure can. I don't recall the time or pressure, but it would be in the cannin books or on balls website I'm sure.

I always freeze my chicken broth but canning would sure be more convienent. I ususally forget to get the broth out of the freezer or at the last minute need some. Sheila, how many pounds pressure and for how long do you pressure your broth??

I can both my chicken and my broth from cooking all of the scraps. The jars must be pressure canned for 75 minutes. I add a little punch to my broth and even to my canned chicken by adding chicken bouillon to it as well.
