Last year I saw a blog for potato candy. I would really like to make some. My Grandmother use to make it all the time, but unfortunately she didn't use a recipe, it was all done by memory.So,none of us can remember how she did it. Help me out Gals....please!

~wow-that was easier than i expected! i guess it was easy to remember my cousin's recipe card! ok- this was circa 1980's so there may be a newer more i proved version but this one works!~

1 large potato, boiled
1 Tbsp oleo-margarine
1 tsp vanilla
1/2 tsp salt

Peel and mash potato while still warm.Add oleo, vanilla and salt.Add powdered sugar until a very stiff dough forms.

Roll dough out to 1/8 to 1/4 inch thickness, spread with peanut butter. Roll up like a jelly roll. Wrap in waxed paper or store in tightly closed container.Chill well before slicing.

Keep powdered sugar on hand to put on rolling pin so dough doesn't stick.
Have plenty of powdered sugar on hand!


~my note: i only made it twice and it has been years' ago-sorry i don't know how much powdered sugar!!!!~

Great! Thanks Margo! This is perfect and exactly how they did it way back when. Ya just add as much sugar as makes it stiff. Works for me. I remember that's how Grandma did it too. Thanks again! It's better than the one I found on allrecipes.com.

I need to try this. I just tried to make some with coconut and it turned out more like coconut cream pie filling! lol. It wasn't bad though!

well i never heard of such a thing. i am a potatoehollic.lol and a candy sugarhollic.lol so i will try this for sure. how fun all you farmgirls are. i love MJF and this site. always support love and something new to learn each day. thanks so much happy days sherrye
