I love potato soup, with dumplings, I'll have to dig up the recipe for you! It's one of my favorites, though Chicken Noodle soup is right there too :)

Creamy green onion and potato soup is fantastic, easy, and uses only one pot! Cut red potatoes (I like skin-on) or other waxy potatoes into small chunks. Add at least one bunch of green onions (about 8) sliced up, green and white parts. Put veggies in pot and add cold water not quite to cover. Bring to a boil and simmer until soft. DO NOT DRAIN! Mash the potatoes with a flat whisk right in the pot. Then add cream cheese (I use about a half block) and stir until melted. Then add milk until desired consistency is reached. Salt and pepper liberally. Devour!

This is my favorite, quick, cold-weather soup. It's creamy, but not too heavy (because of the water and milk) and very comforting. I like to leave the skin on the potatoes and leave a few chunks because it gives some "toothsome" flavor and something to chew on.

Here's my grandmother's recipe for French vegetable soup. It's the best!

Grandma Dulude’s French Vegetable Soup

In large pot, quickly brown 1 lb. ground beef and drain.

Add:

1 large can chicken broth
1 quart water
1 package onion soup mix
2 stalks celery, chopped finely
Boil for 20 minutes.

Now add:

14 oz. canned tomatoes or stewed tomatoes, cut into small pieces, with juice
1 package frozen vegetable mix
˝ c. orzo (pasta)

Boil for 15 minutes longer.

Add 1 T. worchestershire sauce.

Serve hot. Add a little grated parmesan to each bowl, if desired. ;)

On a cold day, there’s nothing like it!

Enjoy!

Grandaughter and I made Olive Garden's Pasta Fagioli as one of the Christmas Eve soups. Really yummy. Wish I had this French Vegetable Soup recipe then. Sounds wonderful! I could eat soup 3 times/day, I'll try this before she goes back to college!

Nini, now THAT sounds absolutely yummy. It's 20 here this morning and I have all the ingredients for your soup. Guess what we'll be having for supper tonight?? And corn muffins to boot. (Can you hear the drool dripping?)
