Soak : 2tsp gelatin in: 1/4 c. cold water Scald over low heat but do not boil: 3/4 c. milk with: seeds scraped from a 2in section of vanilla bean Stir into it, until dissolved: 3/4 c. sugar 1/8 tsp salt Stir in the soaked gelatin. cool and place this mixture in refrig. trays until thoroughly chilled. Then whip w/ wire whisk until thickened but not stiff: 3 c. whipping cream Fold cream into chilled & beaten gelatin mixture. Still-freeze the dessert in a mold or in foil-covered refrig. tray. |
