I visited the Keezletown Cannery this week and was greated by two of the nicest women. They were Mother and her Dau. in Law. They explained everything to me and I was in awe of the largest pressure cookers I have ever seen. They have a site on the internet. What a wonderful community service they do. It was started in the 1940's and worked with all of the Victory Gardens and is one of the last canneries in the US. If you are close to it I invite you to so see. The ladies said to bring your food and they will help/teach you how to can. Take your own glass jars and you can purchase the metal cans, which they will seal for you prior to pressurizing them. Way to go VA I had a wonderful visit this week.
