I thought I'd start a new thread to share my taco soup recipe. Please keep in mind that I was flying by the seat of my pants and fumbling my way through things trying to create a flavor I imagined in my head. Measurements are approximate and I ended up with a ton of soup.
2 lbs browned and drained ground sirloin 1 box of chopped tomatoes 1/2 of an onion finely chopped 2 cloves of garlic peeled and chopped 1 pint of medium salsa 1-1.5 packets of taco seasoning 2 small bags of frozen corn For beans I measured out a cup of dried black beans mixed with some kidney beans. Soaked for a few hours the. Boiled until tender. Beef stock to think soup to desired consistancy.
Mix everything together and simmer until you deem it done! I served it with tortillas, shredded cheese and sour cream. After I fed DH and I we had six pints of soup left to freeze!
