Another wonderful recipe - have not made them in years but I think that might be one the menu for this weekend. Have you ever used coconut oil to fry your sopapillas in??? Since I have tried to change my eating habits over the years I have kept away from fried foods but am wondering if the taste would work with coconut oil?

I know this is a fried food but for us, I don't make these all the time. I have never used coconut oil. Does it have the coconut flavor? I think it would be fine is you served these as a dessert. In NM you can stuff these or they are usually served either as bread with your meal or after your meal, plain with honey. DELICIOUS! Keep me posted on the coconut oil sounds fun!!

Maybe I should say - I grew up in Colorado and Mexican food is a staple with me and my family. I have been making Sopapillas since I was a teenager but since my sons are grown and it is just me I have stoped making them - should treat myself to some. The coconut oil is not really sweet but it does have a higher burning temp and no transfats. I have switched over from something like a crisco or lard. Coconut oil is used in many cultures and just wondered if you tried it. It is also a way to be able to enjoy those fried foods without some of the concerns of lard.

One of my sons favorite is Sopapillas with home made dandellion syrup with fresh cut fruit. I also would make a slow cooked pulled pork with fresh chiles and Sopapillas instead of tortillas...

Love reading your recipes and nice to see the love of cooking shared.

Oh my that dandelion syrup with fruit sounds wonderful!!!

I have never seen coconut oil but I'd like to try it. I usually use canola but you know oil is still oil. My mom used to use lard and crisco of course I don't think anyone does that anymore. Thanks for sharing!!!

I usually fry everything in lard, but since we're getting out of the farming biz, I'm trying to ration the lard I have left. I used to fry everything in coconut oil, and we loved it, but the other day I fried some potatoes in CO, and we could taste the difference. I say we...my mom and I...the boys don't have such discriminating tastes!! So the CO is something you get used to, and it does taste good.

I'm talking about unrefined...Mom just walked in and said that you can buy refined and deodorized CO that is still organic. That way you wouldn't be able to taste a coconuty taste at all.
