This had TOO many vegetables in it, Lisa, even for me!!!! I saw it yesterday when she posted it on Facebook. I would never eat all that zucchini...

Roasting your veggies (carrots, onions, red peppers and celery) make a really good chicken noodle soup, too. I use a wheat rotini noodle for a hardy soup.

This recipe sounds yummy-might even be better if you add some spicy sausage.
Do you think this would freeze well if you omit the noodles?

Sausage is yummy and cabbage and Italian seasonings. More cheese!

Jessi, I often omit the noodles and add more beans. You could add noodles as you thaw and reheat.

Jessi, I often cook noodles separately and add to the soup when I reheat. I cook the noodles very al dente and that way they don't end up too mushy, and I can freeze the noodles separately and use either in the soup or other dishes later.
