I found this recipe on line and wanted to share it. So Good!. I love mangoes and they add just the right amount of tropical to this delicious soup...serve it in a pumpkin to add a festive fall flavour to your dinner =) I cut down on the cilantro, because I'm mildly allergic to it in large amounts, but this is a lovely soup to play around with. I'm thinking I'll try a curry version soon.



Pumpkin-Mango soup
Ingredients

* 2 Cup Chicken Broth
* 11 Fl. Oz. Mango Nectar (one can)
* 15 Oz Pumpkin Puree (one can)
* 1/4 Cup Chunky Peanut Butter
* 2 Tablespoon Rice Vinegar
* 1 1/2 Tbsp Minced Green Onions or Chives
* 1 Teaspoon Fresh Grated Ginger
* 1 Tablespoon Chopped Fresh Cilantro
* 1/4 Tsp Crushed Red Pepper
* 1/2 Tsp Grated Orange Rind
* 1 Tablespoon Crushed Garlic (one clove)
* 3 Tsp Chopped Fresh Cilantro - Garnish
* 6 Slices Fresh Mango - Garnish
* 6 Pieces Sugared Ginger - Garnish

Directions

* Combine chicken broth, pumpkin puree, and mango nectar in a large pot and bring to a boil. Cover, reduce heat, and simmer for 10 minutes.
* In a large cup or bowl, combine 1 cup of the hot pumpkin soup mixture with the peanut butter, and stir until well blended, then return mixture to pot.
* Stir in vinegar and the rest of the ingredients (not the garnishes!), and simmer for 3 minutes until the flavors are blended and its heated through.
* Pour into soup bowls, sprinkle each on with the chopped cilantro, and garnish each bowl with a thin slice of fresh mango and a piece of sugared ginger.

Interesting! I think of mangos as sweet, not savory, so it's hard to wrap my mind around what this might taste like. I think I should make it to find out! But I highly encourage you to try the curry version - I have had a curry thai pumpkin soup that was incredible.
