I would love a pumpkin bread recipe or something with pumpkin in it-
we went to the market and bought what would be a small pie pumpkin but it wasn't small enough. We made a pumpkin pie and still have at least 4 cups of pumpkin left.

My mom made the BEST-not from canned. It was in the bundt pan sprinkled w/ 10x sugar. See if I can remember to bring it home to send you. Her recipe box is at my office.

Pumpkin-Pecan Tea Loaf

1/3 cup butter
1-1/3 cups sugar
2 eggs
1/2 can pumpkin
1/3 cup water
1-1/4 cups all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
2/3 cup chopped pecans

Beat together butter and sugar until creamy. Beat in eggs. Add pumpkin and water; stir until blended. In another bowl, stir together all-purpose flour, whole wheat flour, baking soda, salt, baking powder, cardamom, cinnamon, and cloves until thoroughly combined. Gradually add these dry ingredients to pumpkin mixture and stir until well blended. Stir in chopped pecans. Pour batter into a greased and floured 9 x 5-inch loaf pan.

Bake in a preheated 350 degree oven (325 degrees for glass pans) for about 1-1/4 hours or until bread begins to pull away from sides of pan and a wooden pick inserted in center comes out clean. Let cool in pan for 10 minutes; then turn out onto a rack to cool completely.

Hi Jessi Lynn -

Here is my recipe for Pumpkin Chocolate Chip Muffins. (I like my pumpkin recipes to be a little bit spicier, so I'm sending my pumpkin pie spice mix recipe, too.) It's a family favorite!

I make it and turn it into a bread pan to make pumpkin bread, too - just bake it longer til an inserted pick comes out clean, about 50 to 60 minutes. It's yummy either way!

Just a little hint: One even cup of pumpkin works great, but I add a "heaping" cup of pumpkin - the moister and more pumkinier the better! It's also okay to double or even triple the recipe and freeze the extras for later! :)

Pumpkin Chocolate Chip Muffins


1 1/3 c. flour
1 c. sugar
1 T. pumpkin pie spice (my mix below)
1 tsp. baking soda
¼ tsp. baking powder
¼ tsp. salt
2 large eggs
1 c. pumpkin
½ c. butter, melted
1 c. chocolate chips

Oven to 375°

In large bowl, mix well: flour, sugar, spices, baking soda, baking powder & salt.

In a separate bowl, whisk eggs, pumpkin and butter until well blended. Stir in chocolate chips.

Pour wet ingredients into dry ingredients. Fold with spatula just til dry ingredients are moistened.

Using an ice cream scoop, scoop batter evenly into muffin cups. Bake 20 - 25 minutes until puffed and springy to the touch. Turn out to cool onto a rack.

These are great warm, but even better if you let sit overnight!


My Pumpkin Pie Spice

6 parts (tsp) cinnamon
2 parts (tsp) nutmeg
1 part (tsp) cloves
1 part (tsp) allspice
1 part (tsp) ginger

Place ingredients in a jar. Shake well. Keep sealed tight!

Enjoy!!!

I can't remember who posted it but look in the past pages for Maine Pumpkin loaf, it is an excellent recipe.

If time permits I'll make ninibinis pumpkin chip miffins for dessert tomarrow (thanks for the pumpkin spice mix-I'll add it to the families favorite recipe journal)
the pumpkin pecan loaf might be great with breakfast
