I was reading through the MaryJane's Cookbook, Ideabook, Lifebook this week - again - and rediscovered the entry about sprouting seeds in your own kitchen. I'm trying it today, there are some chickpeas soaking on my counter.

I was wondering, does anyone else do this? Do you have any tips or suggestions? And what about recipes? Can you add sprouts to stir frys and bakeovers like you would any other veggie? Does anyone have any great recipes using sprouts?

I'm going to keep updating this as my sprouting adventures continue - so join along if you'd like! It's on page 82 of the book. As I said, I'm starting with chickpeas but once I've mastered that I have some lentils, couscous and pinto beans to try. I'm excited, this will be fun!

Lentil Tabouli Salad
3 cups green lentil sprouts
1 bunch green scallions, tops included
2 bunches parsley, chopped
1 small bunch celery chopped very fine
2 cucumbers finely chopped
3-4 medium tomatoes finely chopped

In large bowl, mix all ingredients. Toss with salt, fresh cracked pepper lemon juice and olive oil to taste. serve well chilled wrapped in green leaf lettuce leaves.

There's a bunch of recipes out there...the internet is the best resource. My favorite way to use alfalfa sprouts is on an avocado, sprout, mayo, whole wheat, and tomato sandwich (sometimes I have slices of turkey too).
I think I once read sprouts are considered a complete food...need to find where I read that and double-check though.

I like radish, lentil and pea sprouts a lot, myself.
I saw a curried lentil sprout salad somewhere. I'll try to find and post it !

EDIT: Found it! It's very tasty!


Curried lentil sprout salad!
* 2 cups lentil sprouts
* 1/2 cup seeded, diced cucumber
* 1/2 cup seeded, chopped tomato
* 1/3 cup chopped green onions
* 2 tablespoons chopped fresh cilantro
* 1/2 cup thinly sliced radishes (optional)
* 1 tablespoon olive oil
* 2 tablespoons lemon juice
* 1 tablespoon white wine vinegar
* 1 1/2 teaspoons dried oregano
* 1/2 teaspoon garlic powder
* 1 1/2 teaspoons curry powder
* 1/2 teaspoon dry mustard
* 1 pinch salt and pepper to taste

Directions

1. In a medium bowl, combine the lentil sprouts, cucumber, tomato, green onions, cilantro and radishes. Toss lightly.
2. In a smaller bowl, whisk together the olive oil, lemon juice, white wine vinegar, oregano, garlic powder, curry powder, mustard, salt and pepper. Drizzle the dressing over the salad, and toss lightly to coat. Chill for 20 to 30 minutes to allow the flavors to blend before serving.

Our favorite way to eat them is to put them on our sandwiches with a bit of salt on them. Even my seven year old loves them. We also throw them in salad. Enjoy. Keep us posted as to how it goes!

Heather, Couscous is a pasta, not a seed so it will not sprout. I don't want you to find that one out the hard way. It would be a waste of good couscous. Good luck with your sprouting.
