One of the ways I strecth our budget is to use pasta. What is your favorite pasta recipe? Share it with me so I can try some new ones!Thanks!

We add pasta to soups, chili, even left over gravy, course you have to cook it first for the last one. We will put anything over pasta, even diced tomatoes with a dash of basil and garlic and topped with shredded cheese. Pizza pasta! Yummy!

When I was a kid at home, my Mom made a big pot of pinto beans and cornbread. A couple of days later, she'd add wagon-wheel pasta and ...man-o-man, we loved that. I still like it!!! ;-) (oh, and don't forget a big, cold glass of buttermilk with that too) YUM!!

I plain, straight out love pasta! I have an atlas pasta machine and when ever I have the time, I love to spend the afternoon making fresh pasta YUM! I love to brown chicken breast bits and then add garlic and a colourful blend of sweet peppers and green onions to a big pot of pasta and warm butter and parmasan, season to taste and feast!...tastes great with shrimp or scallops too. Very basic, but nice enough for company!

These sound yummy! I guess my stand by is goulash. 1/2 gr beef, elbow macaroni, tomato sauce, paprika, minced onion, pepper, & serve. My husband's favorite!

Karla- Goulash is my favorite too! I love it best the second day after the sauce has been really well absorbed by the noodles! Yummy! And even love it cold!

If I am running low on grocery money for the shopping period and need to fill a few meals in, I always do either pasta or pizza (Pizza crust is about $.52 or I make our own, sauce is just seasoned tomato sauce, and some cheese). It's a good way to fill everyone's tummy and have them still enjoy the meal.

Another meal I like to make to stretch my dollars is Bean Soup.

I guess my 2nd pasta stand by would be spaghetti-tell me the different ways you fix spaghetti?

Karla,

I fix what we call "camping spaghetti" because it was a dish we could always whip up quickly on the first day of a camping trip after traveling all day.

Slice up some fully cooked smoked sausage (I use turkey sausage, very inexpensive) and brown it in a skillet. Add 1 jar Plain Ragu and heat. Serve over cooked spaghetti with some parmesan cheese. Very simple but surprisingly tasty! :)

Okay, this is not spaghetti, but it looked so good....I make mine with a rich tomato sauce and Italian sausage, but this also sounds yummy!

Roasted Mediterranean Vegetable Lasagne Recipe

Serves/Makes: 6

Ingredients:
***for the filling:***
1 small eggplant
2 medium zucchini
1 pound cherry tomatoes, skinned
1 small red bell pepper, deseeded and cut into 1" squares
1 small yellow bell pepper, deseeded and cut into 1" squares
1 large onion, sliced and cut into 1" squares
2 fat garlic cloves, crushed
2 tbs. fresh basil, leaves torn so that they stay quite visible
1/4 cup extra virgin olive oil
2/3 cup pitted black olives, chopped

3/4 cup mozzarella, grated
***for the sauce:***
1/4 cup flour
3 tablespoons butter
2 1/2 cups milk
1 bay leaf
grating of fresh nutmeg
1/2 cup grated Parmigiano-Reggiano
9 sheets oven-ready lasagne
***for the topping:***
2 tablespoons grated Parmigiano-Reggiano



Directions:

Preheat the over to 475. Prepare the eggplant and zucchini ahead of time by cutting them into 1" dice, leaving the skins on. Toss the dice in about 2 teaspoons of salt and pack them into a colander with a plate on top and a heavy weight on top of the plate. Set them aside for an hour, so that some of the bitter juices drain out. Squeeze out any juices left and dry the dice thoroughly in a clean dish towel. Arrange the tomatoes, eggplant, zucchini, peppers, and onion in the baking pan (a shallow 9 x 9) Sprinkle with the chopped garlic, basil, and olive oil, toss everything around in the oil to get a good coating, and season with salt and pepper. Place the pan on the highest shelf of the oven for 30 to 40 minutes, or until the vegetables are toasted brown at the edges. Meanwhile, make the sauce: place all the sauce ingredients (except the cheese) in a small saucepan and stir continuously over medium heat until the sauce boils and thickens. Turn the heat down to its lowest and let the sauce cook for 2 minutes. Add the 3 tablespoons grated Parmigiano.

When the vegetables are done, remove them from the oven and stir in the chopped olives and the capers. turn the oven down to 350. Pour one-quarter of the sauce into the baking dish, followed by one-third of the vegetable mixture. Sprinkle in a third of the mozzarella and follow this with a single layer of lasagne sheets. repeat this process, ending up with a final layer of sauce and a good sprinkling of grated Parmigiano. Place the disk in the oven and bake for 25 to 30 minutes, or until the top is crusty and golden. All this needs is a plain lettuce salad with a lemony dressing as an accompaniment.

Mmmmmm.....those recipes sound really yummy! I love pasta with sausage and veggies too. Bob Evans restaurant use to have one I loved, but they discontinued it...of course... *rolls eyes...sigh*

got this recipe from kitchen daily-a real hit

1: 3 tbs mirin (sweetened rice wine)
tsp ground ginger
garlic cloves
12 ounce sirlion steak
-----------------
2: 3 tbs soy sauce
3 tbs strong brewed green tea
2 tbs rice vinegar
1 tbs canola oil
1 tbs toasted sesame oil
cup shredded carrots
-----------------
4 cups greens-we used spinach and arugula

4 ounces soba noodles (japanese buckwheat)came packaged w/4 groupings of noodles used 2-for 5 of us

Prepped night before:
Combine #1 ingredients in a bowl
Combine #2 ingedients -this is the dressing (combined in a measuring cup and covered with foil)
Done before dinner:
picked greens and washed
made noodles

grill steak/let rest and slice into strips
combine noodles and dressing-toss
plate-greens noodles and top with steak
We loved this dish the noodles are real hardy-this went into the families favorite recipe journal-quick and easy

Judy, I'm with you. When my kids were growing up, I always made homemade noodles and added them to leftover beans. They loved this bean soup. You could eat what was served or you could have a peanut butter sandwich and milk, but they reeally liked this soup. lol

WOW Oleta, something kids loved and DIDN'T want to sub a PB sammy for...that's GREAT!!! ;-)
It is amazing just how many ways beans or pasta can be used isn't it. I've even seen dessert recipes on Allrecipes.com using both items. Funny!
