Hey there all!

I'm not Jewish but enjoy teaching my kids some of the Jewish traditions that Jesus and the disciples would have enjoyed growing up. Rosh Hashanah is the Jewish New Year, and begins the "ten days of awe" during which Jewish people reflect over their previous year's actions and seek forgiveness, both of people that they may have wronged and well as of God. There are several different customs that go along with this holiday (including the blowing of the Shofar/rams horn, etc) but this posting is about the neat custom of eating apples and honey to signify wishes for a sweet new year.

So my question is - does anyone have a yummy Rosh Hashana apple and honey cake recipe??

I sure would be interested in that recipe too - sounds wonderful and if only more folks would take the time to learn about others what a world we would be living in.

I found a recipe which is currently in my oven!! as I sit here in my flannel jammies with an apron on, drinking my 3rd cuppa tea and visiting with ya'll!

Rosh Hashanah Apple Honey Cake

1/2 cups honey
1/2 cup shortening
2 eggs
2 cups flour
1/2 teaspoon salt
2 teaspoon soda
1 teaspoon nutmeg
1 teaspoon cinnamon
4 cups diced apples
1 cup chopped walnuts
Cream together honey, shortening and eggs. Sift salt, soda, nutmeg, cinnamon and flour and add to creamed mixture. Stir in apples and nuts. Pour into greased 9 x 13 x 2 pan and bake at 350 degrees for 45 minutes. Remove from oven and cool completely before frosting.

Cream Cheese Frosting
1 Tablespoon Butter
6 ounces softened cream cheese
1/4 cup honey
2 teaspoon vanilla
1/2 cup chopped nuts
Cream butter, cream cheese, honey and vanilla until light and fluffy. Add nuts. Frost cooled cake.

Sounds yummy huh? Smells even better! although I may should have diced my apple bits up finer, instead of just chopping them. I used a green apple from Costco called "Ginger Gold", sort of tart.
