HI y'all! Sitting here snapping yellow beans to freeze, and thought I'd share a simple, fast, small batch recipe for all of you out there with too many zucchini! I'm making some tomorrow!
ZUCCHINI RELISH (MAKES 4 HALF-PINTS)
2 c chopped zucchini 1 c chopped onion 1 c chopped green or red pepper 2 Tb salt 1 3/4 c sugar 2 tsp celery seed 1 tsp mustard seed 1 c cider vinegar
MIX ZUCCHINI, ONION + PEPPER, SPRINKLE WITH SALT, COVER WITH COLD WATER + LET STAND 2 HRS. DRAIN, RINSE, + DRAIN AGAIN. MIX REMAINING INGREDIENTS IN LG. SAUCEPAN, BRING TO A BOIL. ADD VEGGIES, SIMMER 10 MINUTES. PACK HOT RELISH INTO HOT STERILIZED JARS, LEAVE 1/4" AT THE TOPS. REMOVE BUBBLES. SCREW ON LIDS + RINGS, PROCESS IN BOILING HOT WATER BATH FOR 10 MINUTES. COOL, REMOVE RINGS, STORE IN DARK, COOL PLACE.
MAKES 4 HALF-PINTS

Is this something that I can make with the WAY overgrown zucchini that I found in my garden after being gone for one week? I made zucchini bread with some, but that didn't even touch the supply of big fat zucchini that I have LOL!

Elizabeth, this looks close to the zucchini relish I am impatiently waiting on my zukes for!!! Mine has turmeric in it too and it gives it that beautiful golden color! I love it! Liza Jane- when I made it last year that's what I used, was the big overgrown ones....I just made sure to take the seeds out. It worked out great!
