My daughter is picking 40 cucumbers at a time & I am making pickles. Does anyone have a great kosher dill pickle recipe that they would like to share? The ones I have are ok but not great!

I have the Ball book. It was ok. But not quite what I had in mind-too sweet I guess-more dill. I guess I could just adjust those 2 ingredients without problems.

hmm don't know. I like bread and butter. lol haha I have a aunt who makes great dill pickles. I wish I could help.
Maybe country woman magazine has something that might be better.

Hi Karla -
I made the dill pickles in the Ball Canning book, and I didn't like them either - like you, I though they were too sweet for a dill and also not "dilly" enough. I'll keep looking for another recipe too and let you know if I find something that sounds better.

I have a long history of making really bad dill pickles. Two years ago I found some recipes on http://www.allrecipes.com There was one I liked in particular that has you cover the cukes with ice for several hours--just like bread and butter pickles--and then after you pack them into the jars, cover them with boiling brine. They are fabulous! Just search the website for dill pickles and you should be able to find the recipe.

I'm having an awful time with my dill pickles. I to have tried the Ball recipe and it is to sweet for me. I want a really dilly/vinegar flavor. My biggest problem is after a year on the shelf the rind is crisp but the middle is mush. What am I doing wrong. I've alomost given up on trying again. Any hints?

I often have that problem with mushy pickles too, but I recently learned that can be caused by using hard water. I will be stopping to buy 5 gallons of filtered "city" water in town today before I start canning pickles tomorrow. I've used the recipe from the Ball blue book, and the "pickle mix" they sometimes sell in stores. I wasn't impressed with the mix, and have to doctor up the recipe in the book pretty well with fresh garlic (2 cloves per jar) and extra dill. Picking up 25 pounds of cucumbers tomorrow at farmer's market! |
