I am in need of more recipes to use my bottleneck yellow squash with. I froze 4 cups yesterday, but would love to bake something new today. I picked 3 zucchini, 3 yellow squash and 4 bottleneck squash today. We got a boat load of rain yesterday so I am sure I'll have more tomorrow.

I like to slice & saute in butter & garlic-then sprinkle with garlic powder. Yummy!

I like to slice, bread and fry it then make sandwiches with tomato and lettuce and mayo. Yummy!

Im with Angela, I slice the squash and fry it with a bit of olive oil and garlic OR even better, grill it. Then use it to make panini sandwiches. It is such a quick lunch, slice the loaf like you were making a giant burger bun, put in the fillings, carmelized onions, your roasted squashes, maybe some sundried tomato and sauteed mushrooms, a bit of parmesan. A little basil and rosemary, lots of black pepper. brush the bread with a bit of olive oil and toss it in the oven for 10 minutes on 350 just to crisp up the crust and melt cheese. So good it'll make you slap yer mama! As an old friend used to say.

slice the squash, place olive oil in fry pan, add onions a little garlic,saute then add some stewed tomatoes.

Also they make a good lasagna too, if you dice them and fry them up and then include them instead of sausage or burger. A lighter flavor for summer.

Thank you all! I just searched the Internet and found a few more recipes. It's hard to find ones that do not use canned soups, boxed mixes or other processed foods. We try to eat healthy.

I found this one that uses 8 med. yellow squash. I may be trying this one. I have cornmeal from a flour mill that stone grinds it, and sells it without preservatives.

For lunch today I took a yellow squash and cut it length wise. This made kind of squash steaks. I marinated the squash in Tuscan Italian Salad Dressing. I put it on the grill and grilled them until they had browned. They were sooooo good.

I cut the zucchini and yellow squash in half lenghtwise andthen in slices. place in frying pan with olive oil and several cloves of garlic diced. Cook until tender. Meanwhile cook any kind of macaron, ziti, spaghetti etc. until done. Drain but don't throw away all the water. place macaroni in bowl, top with squash and put water from macaroni in bowl to top of macaroni level and sprinkle with romano cheese. Delish!

I posted the wrong link for the pattie recipe. We made them today and they were delicious with the sour cream.

I also read an article today that stated Crookneck yellow squash is a genetically altered version of the straight neck squash. I wonder if I should be planting it. Anyway, it's something for me to research more.

Thanks again for the recipe ideas. The one I am posting uses 8 med. squash.
