What a great story. Very adventurous of you. And the cow looked very content while you milked her. Now how long will you have to age the cheese? I have not attempted cheddar yet.

I used the book, "Cheese Making Made Easy" from the New England Cheesemaking Company and it says to age it 3 months to 12 months, depending on how sharp you want it to be. I have half a mind to write to them and say, "Easy? Are you kidding??!!" Cheesemaking is not easy. It is very labor intensive and after being chained to it for hours and hours, realizing that two gallons of milk only gives back one lb of cheese and discovering that I had to wait at least 3 months to even try it, I decided that the pioneers must have REALLY treasured their cheese!! However, I am not deterred and I plan on making mozarella next. Parmesan would be cool too!!

Thanks for the kind words. It's nice to know that somebody read it and enjoyed it. Sometimes I feel like I'm just writing to the air!! :-) I'm satisfying the inner "writer" in me since I'm too old to have an inner "child". :-)

You are much more bold than you give yourself credit for! Maybe I'll get that bold and attempt to milk a cow. My husband is still trying to wrap his brain around my last email as I tried to explain that maybe we should get enough land to keep a goat and some chickens! His response was 'who are you and what have you done with my wife?!'

I'm right there with you. I'd like a goat and some chickens too! I'm not sure I could handle a whole cow. My sister raised goats and made the best goat cheese. They are more my short size! And I'd love to have some fresh eggs in the morning. You go, girl!
