Does anyone have an easy potato salad recipe that uses balsamic/olive oil for dressing rather than mayo? Ideas? Thank you! Linda

a not quite recipe :)

boil thin-skinned potatoes- Yukon golds are yummy
sauté up red onion in a little olive oil-or leave them raw if you like the bite
half our family likes pickle- half fresh raw red peppers -use either or both
toss with red-wine vinegar or balsamic vinegar and olive oil about a 2/3 blend heavier on the oil
salt/pepper to taste
sprinkle with fresh chives or dill or both
great at room temp on a hot day

The three potato salad recipes in MJ's Outpost book use oil and vinegar instead of mayonnaise. I made the smoked bacon and mustard potato salad for our memorial day supper tonight.

My mom makes the best homemade potato salad recipe with a balsamic/olive oil dressing. I will see if she can post it for me.

I just saw a recipe like that on allrecipes.com. They have a nice variety.

I will sometimes just make a "regular" potato salad, with all the ingredients that you like ( onions, celery, pickles, whatever) then do a German Potato Salad type dressing by mixing apple cider vinegar (the greatest creation on Earth) with some mustard, salt and pepper and a little oil to thin it out if it's too thick and tart for you. Very tasty and best if kept in refrigeration for a few hours before serving so the dressing can really absorb into the potatoes.

I found this one in my search to remove dairy.

Potato and Radish Salad
1 lb new potatoes
3 tbsp olive oil
2 tbsp wine vinegar ( I used rice vinegar but balsamic would work too)
2 tsp coarse grain mustard
1 tsp honey
salt and ground black pepper
6-8 radishes
2 tbsp fresh chives, chopped.
Boil potatoes until just tender, drain, return to pan and cut any large potatoes in half.
Make the dressing with the oil, vinegar, mustard, honey and seasoning. Mix thoroughly in a bowl.
Toss the dressing into the potatoes while they are still cooling and allow them to stand for an hour of so.
Mix in the radishes and chives (I used spinach instead).

I made the smoked bacon and mustard potato salad this past Sunday for a potluck. WOW!! Was it ever good!! The only thing I did different was to roast the potatoes in the oven since we don't grill.

I'm so glad you girls reminded me of the potato salad recipes in MJ's cookbook, Candy, I'm with you I'll probably roast my 'taters in the oven tonight. I'm thinking the Southwest one mmmmm.....
