Thought I'd share these BakeOver creations with you:

VEGGIE/BLACK BEAN BakeOver

1 med. yellow summer squas
1 med. zucchini
1 lg. roma (any kind) tomato
1/2 med onion
1/4 -1/3 c. chopped orange or red bell pepper

Chop all veggies and saute in olive oil until just starting to get tender. Add tomatoes just at the end so you don't cook them too much Stir in:
1 - 15 oz. can black beans that have been rinsed and drained
1 - 7 oz. can chopped green chiles or 1/4 c. chopped fresh mild hot pepper
1 tsp. EACH of cilantro, ground cumin and garlic powder
1/8 tsp. cayenne powder

Mix well and place into baking pan (I used a cast iron skillet)

TOPPING:
1 c. all purpose flour
1/c c. blue cornmeal
2 tsp. baking powder
1/4 tsp. baking soda
3/4 tsp. salt
Mix together and cut in 3 tblsp. butter
Add 1/2 c. water
Form into dough and either roll out into crust or place over filling in flattened balls.
Bake 20 minutes at 425. Turn upside down onto large serving plate and top with 1/2 cup grated sharp cheddar cheese and let melt a bit before serving.

APPLE-RAISIN-CRAN CRUNCH

2 large apples, chopped, unpeeled (unless you HAVE to peel)
2 tblsp. butter.
Either saute slightly in the saucepan or spread in glass baking dish and microwave until slightly tender.

ADD: 1/2 cup raisins
1/2 cup dried cranberries
1/2 cup chopped walnuts
1 tsp. cinnamon
1/2 cup brown sugar
1/4 cup melted butter

Stir until mixed well.

TOPPING: 1 c. MJG Budget Mix
1/2 c. oat flour (I use my own home-ground)
1 tblsp. brown sugar
1/2 tsp. cinnamon
1/2 tsp. baking powder

Mix well, cut in 3 tblsp butter. Add 1/4 c. milk to form dough.
Roll out into crust to cover, or place over apple mix in flattened balls.
BAKE at 400 for 20 minutes. Serve with whipped cream or ice cream

Just found this post. I wanted to "bump" it up for others wanting to try new recipes.

A recipe we've made for years, is a One Pot dish.
Simply fry up one pound of bacon in the bottom of a large pot. Remove and cool on paper towels, drain grease from pan.

In same pot, fill it with peeled and cubed potatoes, with water and a bit of salt. Bring it to a boil, and lower temperature to continue cooking. When the potatoes are about 10-15 minutes from being done, drop in, cleaned and cut fresh green beans. Cook together until done. Drain off water, tear up bacon, and add back to the pot. Mix and serve.

I love this recipe. My mother made it for us for years. It's simple, uses items from your garden, and the bacon can be butchered yourself from raising pigs also. I love the fact it's one pot, and does not require any processed foods.

Those sound SO tasty CJ! I can't wait to experiment more with the BakeOver recipes I see on the forum. Last week I made this:

Sweet Potato BakeOver

- 1-2 sweet potatoes
- mushrooms
- 1 whole onion
- parsley and basil to taste
- feta, to taste
- 1 MaryJanesFarm Garlic Pesto Fry Bed Mix
- coconut oil, butter, white wine
- salt/pepper to taste
-Italian seasoning

I cut the sweet potato into 1/2 inch cubes and sauteed them in medium heat in butter and coconut oil for around 10 minutes. Then, I added the sliced onions and mushrooms for another 5 minutes with a 1/4 cup of dry white wine. Then I added a little salt and pepper and Italian seasoning.
Once they were softened up a bit, but were not overdone, (as they need to go in the oven for 20 minutes more)
I removed them from the heat and added basil and parsley. I rolled out my dough as per the directions, topped the tasty-ness, and baked for 20 minutes.
WOW the house smelled marvelous!
Once done, I flipped it over, added feta and voila! Delicious sweet potato BakeOver. :)

Any recipes you ladies have found that you would suggest?
