Amy,
Loved your blogs. I am always on the hunt for the perfect pie recipe. I finally found one for lemon that doesn't require a double boiler and tastes great. It has never failed to thicken for me. Be glad to send you the recipe if you want it. Maybe in exchange for that coconut one...yum, yum.

The coconut pie looks perfect and I bet it tasted wonderful. The lemon one still looked good to me and I bet tasted good as well!

Oh Amy, that was too cute. Someone had to ahve come in and switched your perfectly thick lemon pie for the pie soup one. Well, maybe not. But it did look scrumptiously good. And I have got to make that cocnut pie as soon as Lent is over.

We've all been in the same boat with thickening cream pies. Your coconut pie looks great. I can't get nice thick meringue like that. I normally do whipped cream instead. You can always use the thin lemon filling for topping for something!!! Still probably tastes good, though.....
