Does anyone have any tips on making my SD starter more sour? It smells sour in the jar but when I make the bread (which turns out great in texture and everything) it tastes more like a french bread than a true sourdough.

I find the amount of starter is the key if I use 2 or more cups it is very sour.

I have found that if I feed my starter every day with just 2 tbsp flour and 1 1/2 tblsp water, it seems to sour better. I also agree with Diana that the amount of starter used makes a difference. I use one cup of starter to three cups of flour and it is pretty sour!

Maybe I should try feeding less then bercause I do use 1 1/2c starter to 3 c flour and it's still frenchy instead of sour.
