I tried this recipe for the first time just the other day, and we all really enjoyed it.

Banana Split Pancakes with Hot Pineapple Syrup
2 cups all-purpose flour
2 tbsp sugar
1 tbsp baking powder
1/4 tsp salt
1 cup whole milk
2 egg yolks
1/4 c melted butter
1 cup mashed banana
Hot Pineapple Syrup (recipe follows)

In a large bowl, combine the flour, sugar, baking powder, and salt.
In a medium bowl, combine the milk, egg yolks, and melted butter. Add the milk mixture to the flour mixture, stirring just until combined. Stir in mashed banana.
Preheat griddle to 325 degrees and spray with nonstick cooking spray. Spoon about 1/4 cup batter for each pancake onto the hot griddle. Cook pancakes for 1 minute, or until tops are covered with bubbles and edges look dry. Turn pancakes and cook for 1 minute. Repeat procedure for the remaining pancake batter. Serve immediately with Hot Pineapple Syrup.

Hot Pineapple Syrup
makes about 3 cups

1 (20 oz) can pineapple chunks in jiuce, drained and juice reserved
1 tbsp cornstarch
2 tbsp butter
1/4 c firmly packed light brown sugar
1/2 c pancake syrup
1 tsp vanilla extract

In a small bowl, combine 3 tablespoons reserved pineapple juice and cornstarch, stirring to combine; set aside.
In a medium skillet, melt butter over medium heat; add drained pineapple, remaining reserved pineapple juice, and brown sugar. Bring to a boil; reduce heat, and simmer for 2 minutes. Add cornstarch mixture, stirring constantly, and simmer for 1 minute, or until thickened. Remove from heat; stir in pancake syrup and vanilla and serve immediately. ~ Paula Deen

We had them this morning, Giovanni woke up and said gramma lets make pancakes, I just use Hungry Jack, add water let sit for a few minutes then on the griddle they go. I love pancakes, sometimes I top them with strawberries & whip-cream especially when my grandson spent the night. Today he just wanted maple-syrup to dip them in.

Well, since I've just been informed by this post that it's National Pancake Day, that's what we'll be having for supper!!!

My mome used to make "frosty morning" pancakes. She would add home-canned pears or apples to the pancake batter. They were fantastic!

A person is a success if they get up in the morning and get to bed at night and in between does what they want to do. Bob Dylan

Thank you National Pancake Day!!! And thank you Melody for brining it to my attention! I made Blueberry Pancakes with Blueberry syrup (from blueberries I canned last summer). They were fantastic! Fried some eggs and bacon to go with it. Perfect!

I think I will go right now and make myself a couple of pancakes. I usually have to lay down after eating them. But I can do that.
