Hi everybody -

I made a recipe over the weekend that called for a cup of buttermilk, but, of course, I could only buy a quart size container. Any suggestions to use up the other 3 cups? I don't normally use buttermilk.

You could make buttermilk biscuits and pancakes and freeze them for days when you don't have time to do the recipe but when they sound good. I have also heard of using it as the liquid in batter for fried chicken and such.

I always soak my chicken in buttermilk. Make a buttermilk pie. I only use buttermilk in my cornbread. A lot of muffin recipes call for buttermilk. Like the bran muffins. My hubby loves a big glass of buttermilk with leftover cornbread crumbled up in it. He's done that for years. And just drinking it is good for your gut because it has all those good enzymes and bacteria the gut needs.

Here's my buttermilk biscut recipe:

2 1/2 c flour
3 T sugar
1 1/2 T baking powder
1/4 t salt
1/2 c butter, softened
1 c buttermilk

Combine flour, sugar. b. powder and salt in bowl.
Add butter, stir in buttermilk until just combined.
Sppon into greased muffin tins or onto a parchemnt lined baking sheet (which ever you prefer) and bake 25-30 minutes at 350 degrees.

If I'm out of buttermilk I just use whole milk but they are better with buttermilk.

I've got a great buttermilk cornbread recipe (http://citygirlcountryfood.wordpress.com/2010/01/04/simple-chili-and-moist-buttermilk-cornbread/) or I've read you can freeze buttermilk, too! www.thekitchn.com recommends freezing it in ice cubes so you can get more exact measurements if necessary.

I have this problem, too. I always have leftover buttermilk, but forget to do stuff with it. Buttermilk from the store DOES last beyond the sell-by/purchase-by date by at least a week, though. Just make sure to check before you use it.

I found a buttermilk powder, I love having it, it keeps my things fluffier. I think that buttermilk makes things rather heavy.

Yum Kristin. Mom and I just love a Big ole glass of buttermilk with cornbread in it. Of course she has to have green onions with hers. ;-) Your Hubby knows what's good!!!

I make my homemade ranch dressing using buttermilk. My kids all love it! I'll post the recipe later this morning....

Ooooh!! Looking forward to that ranch recipie, Brenda!! I've been making it, but always have to buy the packet of seasonings. I would love to make it from scratch instead. My DH eats it on everything, he calls it "white ketchup". :)

I read somewhere that you can freeze it. It makes the consistancy a little different when it thaws but it didn't effect the recipes they tested it on. Now let me see... I think that was America's Test Kitchen, or King Arthur.... something like that.
