After surveying my new little farmette, I have found that every place that would be good for gardening (sun, good drainage) is plagued with briars! If there aren't briars, there are rocks - but mostly there are briars AND rocks The rocks I can use for raised bed borders. As for those briars, I have been cutting them off at the roots but have a question about those roots - do I need to dig them all out, or can I put down a layer of newspaper to keep them from growing back up through the new bed I put down? It's not that I'm lazy or anything it's that I have a lot of ground to cover before planting season has come and gone. Any briar experts out there?

I'm no expert, but I would bet you would need to dig them out.
Briars are tough boogers and probably would bust thru any type of mulch or barrier.

Yep dig up the roots as much as you can get of them but there is a bright spot
where briars grow makes a great garden spot should be good rich soil.
