I bought some Sun dried Tomato Polenta (MJF product-bulk) at the Huckleberry's Organic store over in Spokane, WA.... and I used the recipe she (MaryJane) gave us, Polenta & Italian Sauage....OMG! It was sooooo good & filling.
Topped it off with a nice glass of Pinot Grigio...hubby and I enjoyed it.
And now for dessert!

If you haven't tried Polenta, give it a try...it's easy to make, and so hearty & filling...you can even use it as a simple hot breakfest, with some Maple Syrup drizzeled over it.

You know, one of my favorite things to use polenta for is breakfast. I've always used the packaged premade organic polenta in the refrigerated section and I'll slice it and sautee it up nice and crispy and then serve it with a fried egg, sausage crumbles and salsa verde on top. YUM! So, was the recipe you used on the polenta package or something? It sounds yummy!

Funny you should mention the "polenta logs" ,,,my hubbies mom use to do the same for them when he was growing up.
I got the recipe from an email tip that came to me from the MJF magazine....
But I modified it a bit...as I had bought her Sicilian Sun Dried Tomato Polenta....(at an Organic foods store)
Her recipe was for plain polenta, (4c water, dash of salt, 1 c. Polenta),add some mild italian sauage after the polenta is cooked and then drizzle maple syrup over.....yum!
She also has a "French Fries-Polenta stix" recipe in a past magazine..... Gotta luv Polenta and it's versatility.
