French Silk Frosting

2 sticks butter, softened. (do NOT use margarine)
4 Cups Powdered Sugar
3 Tbsp. Cocoa Powder
1 Tsp. Vanilla
1 to 2 Tbsp Milk

Mix all ingredients, adding Milk last, as needed.

This is very rich, but oh so yummy. Real butter must be used.

Here is my families absolute favorite chocolate frosting recipe:

Chocolate Frosting

6 ounces good quality semi-sweet chocolate
1/2 pound (2 sticks) of unsalted butter at room temperature
1 extra large egg yolk at room temperature
1 teaspoon pure vanilla extract
1 1/4 cup sifted confectioners' sugar
1 tablespoon instant coffee powder (I use espresso powder)

Chop the semi-sweet chocolate and put in a heat proof bowl over a bath of simmering water. Stir until melted, then set aside to cool to room temperature.

In a bowl with an electric mixer fitted with a paddle attachment, beat butter on medium high until light and fluffy. About 3 minutes. Add egg yolk and vanilla and beat for another 3 minutes. Turn the mixer to low and gradually add the confectioners' sugar, then beat at medium speed, scraping sides of the bowl until smooth and creamy. Dissolve the coffee powder in two teaspoons of very hot tap water. On low speed add the coffee and chocolate to the butter mixture and mix until blended. Don't whip! Spread immediately on the cooled cake.

Hope you enjoy whichever recipe you choose!

Here is one that tastes almost like fudge:
6 Tbsp butter
6 Tbsp milk
1 1/3 Cups sugar
combine and boil only 1 minute, add 1 cup of chocolate chips, beat smooth. If you have a double boiler it works best. Karen

This recipe is for my "special" devilish chocolate cake i make - my clients rave over it.

4 cups confections sugar;1 cup cocoa powder; 2 3/4 sticks butter room temp - unsalted; 1 tablespoon of vanilla; 1/4 plus 2 T. milk.

Mix butter, add cocoa, mix thoroughly. Then add confectioners, mix low, add vanilla and 1/4 milk, add 2-3 tablespoons milk and mix until creamy and spreadable, but not too heavy. I use this for my chocolate cake and put some in between layers and on top, then pipe borders. You can do this on chocolate cake and freeze it also.

Thank you thank you all! I absolutely LOVE this place!! I got support over Christmas with my caramels, and you ladies just step right up to the plate with anything that is needed, and share your wisdom... What a wonderful thing. I really appreciate everyone taking the time to answer.
