Now that my hens are producing (finally!), I'd love to hear some favorite ways to eat eggs. For me, I love them soft poached and smothered in hollandaise, or scrambled with jalapenos and cheddar.

Kimberly, I love all kinds of egg recipes! Quiches, omeletts, fried eggs, poached, etc. This winter I've started making egg drop soup to. I got a super simple recipe and have already made it twice, it's wonderful! Plus soup is a nice thing to have this time of year.

I love scrambled eggs with onion tops and ketchup mixed in. Yummy!

My favorite is hard boiled---I especially love deviled eggs. Cheese omelets are also good.

I love all kinds - fried, boiled (kinda soft but not hard either..sort of in between, I don't like too soft either..lol), scrambled, omelette, .... poached too! I always forget that one! I love huevos rancheros too! Hey, what can I say! I'm 100% Texan!

My very favorite way is over easy!
But, I do hard boil them too, and love them like this. When I hard boil them, I cook 4. 2 for me, 1 for Bonnie, and 1 for Bear. (they are my golden retrievers) Whenever they hear me roll an egg on the counter they come running!!!
I actually eat more eggs than the normal person does. It started years ago when I did a low carb diet. Not long after that I found out that I have low blood sugar, so was told to eat more protein, and told that I could eat eggs every day if I wanted to! And, I usually do.
I gotta get me some chickens!

Sunny side up, fried in bacon grease, so that the edges get paper thin and crispy. Just until the yolks are mostly set, lots of salt and pepper, and then make some whole wheat toast (stiff), butter and dip. I only "order" them at my mom's and my house this way...noone else gets the "crispy" part. I think it's the bacon grease!!!

MMMMmmmmmmm.....Deviled Eggs!! I absolutely love them. They are a staple at any family gathering. It's like it's not actually a meal if we don't have deviled eggs. Hee hee!!

My family has been learning new ways to eat eggs now that our hens are laying too. We love quiche for dinner. I've been having horrible luck with deviled eggs. I've been told the eggs need to get old first before hard boiling them to get them to peel easier. My customers love our eggs so much I rarely have old eggs. LOL But scrambled eggs are our default meal back up plan at any hour, everyone loves them here.

AlyssaMarie, that is definitely true with boiling fresh eggs. They are impossible to peel. Quiche sounds particularly yummy though.

Hmmm, is it cream of tartar in the water for fresh eggs, that you want to peel? I've heard it, used to do it, but cant' remember, maybe someone can help?
I forgot about egg salad!!! My very favorite sandwich filling!! I love it with either chopped black olives, or chopped green olives, my egg and olive sandwiches that I requested frequently when I was little! :)

We eat eggs often, scrambled, fried, quiche, omelets (hubby makes great omelets), hard boiled, and deviled. One of my favorite quick dinners is an egg sandwich and a bowl of grits. Also like to make meringues and coconut cookies.

Frittata!! - I love deviled eggs too but boy howdy I'm with you all on the hard to peel part. Our hens are a little grumpy right now with the freezing cold so not as many eggs. I'm trying to collect more egg recipes for spring though - a crepe with a poached egg over a slice of ham is good!!

Oh Brenda, I'd forgotten about egg salad sandwiches. That's making my mouth water. OK, I've really gotta start stashing eggs in the back of the fridge so I can "age them to perfection" HAHA!

I knew egg-zactly what I was going to say but after seeing all these different ways to eat eggs I was saying "oh yeah, I like 'em that way" etc. so now I guess I just like eggs everywhich way except raw---but---whipped eggs are raw and great in eggnog. I'm lost now. MB

I love Denver Sandwiches. Reminds me of the times when my mother used to take me to Woolworth's for lunch when we took the bus to the city. Mom's gone now, but I think of her everytime I eat one of these sandwiches!

It's just basically an omelette between two slices of toast. You saute a little bit of onion, green bell pepper, finely chopped cooked ham in a skillet and add beaten eggs to it. Fry on both sides, and salt & pepper to taste.

Apparently it's also called "Western Toast." I know where I grew up (on the Cdn prairies) it's on every small town restaurant menu.
Very simple, but I like it.

I'm an over-easy person myself, every single morning of my life I eat two (my cholesterol numbers are FINE) but I like Spanish potato omelette and Quiche Lorraine too. I can cut these into wedges and not eat too much.

A three-egg omelette, especially with fillings, is too much for me to eat in the morning, but sometimes I'll make that for dinner.
