wash, prick and bake them, then let them cool on the counter for 10 minutes or so, the peels pull right off, then mash them. I like to use a stick blender on them so they get super smooth.

Yep..like Sarah said. I always forget to get out my stick blender..good idea. I just use a potato masher usually.

Just did this yesterday, exactly like Sarah did. I did about 15, and froze a few extra casseroles. Happy Thanksgiving, Carol

I peeled sliced boiled then I put into a baking dish and bake with butter brown sugar and pecans 1 hour 350.
