I'm looking for a quick spice cake recipe that would be good without the cream cheese frosting. Anything featuring cardamom would be appreciated! Thanks!

I have a real simple recipe for spice cake. All the ingredients go right in the cake pan so hardly any cleanup. There is no cardamom called for, but s'pose you could add some. It calls for a caramel frosting (no cream cheese). Its my husband's favorite cake. Be happy to send the recipe along if you'd like it. Sharon

SPICE CAKE

1 1/4 cups flour
1 cup packed brown sugar
1/4 cup cornstarch
1 teaspn each baking soda, allspice & cinnamon
1/2 teaspn each ground cloves & salt
1/3 cup oil
1 Tablespn vinegar
1 cup water
Caramel Frosting (recipe follows)

In 8- or 9-inch square pan with fork mix well flour, sugar, cornstarch, baking soda, allspice, cinnamon, cloves & salt. Add oil, vinegar & water. Mix briskly with fork until thoroughly blended. Bake in a preheated 350 degree over 30 min. or until pick inserted in center comes out clean. Cool in pan on rack, Spread with frosting. Makes 9 servings.

CARAMEL FROSTING
1/4 cup butter or margerine
1/2 cup packed brown sugar
2 Tablespns milk
enuf confectioners' sugar for spreading consistency

In small saucepan melt butter; add brown sugar. Stir over low heat 2 minutes. Add milk; bring to boil. Remove from heat; cool. Slowly beat in confectioners' sugar until smooth.

Here is my mother's recipe for an oatmeal spice cake- very moist and yummy!!

Oatmeal Cake
Suzanne McOsker recipe
Cake ingredients:
1 cup Quick Oats
1/2 cup Shortening
1 cup Brown Sugar
1 cup sugar
3/4 tsp ground Cinnamon
1/2 tsp ground Nutmeg
1/2 tsp ground Cloves
2 eggs
1 1/2 cup flour
1 tsp baking soda
1 tsp salt
1 tsp vanilla extract

Broiler topping ingredients:
6 tablespoons margarine
5 tablespoon evaporated milk
3/4 cup Brown sugar
1/2 cup chopped pecans
1 1/4 shredded coconut

Pour 1 1/4 cup boiling water over quick oats- let stand for 20 min
cream together shortening and sugars. Add oatmeal, vanilla and eggs- mix well. mix together dry ingredients(flour, spices, baking soda and salt) mix well until blended. Pour batter into a greased 13x9 in baking dish and bake at 350 degrees for aprox 30-35 min(until toothpick inserted into the center comes out clean)

prep the broiler topping shortly before baking of cake is complete. Once cake is done, remove cake and turn on broiler to high.
Spread the broiler topping on the hot cake and replace in the oven. Watch closely and remove cake when topping is light brown and bubbly. Watch very closely-coconut will burn.


This recipe is definitely not organic or healthy but can definitely be considered as comfort food in my book.
