When I was a kid, we always made a recipe we called "persimmon pudding", but it was pretty cake-like. I'll see if I can find it.

I've also made persimmon cookies quite a few times. Again, I'll have to find that recipe.

I made a persimmon flan once. It wasn't very good. :)
