I hate to admit it, but I don't really like duck ~ goose ~ pheasant is okay, but I've found a really yummy way to make it so we all LOVE it (my husband loves it any way possible, but this is good for me too!) It was a recipe in the Kraft recipe magazine that comes quarterly, but it's modified for ducks :)

Ingredients: 1 or 2 ducks worth of breast meat (or geese, pheasants, etc), 1 jar of apple pie filling, 1 or 2 boxes of stuffing mix.

Cut up the breast meat into bite sized pieces. Spray bottom of cake pan with cooking spray and pour pie filling into the bottom. Place meat pieces on top of this. Prepare the stuffing mix and spoon the prepared stuffing on top of the duck. Bake until meat is done. Sometimes I've covered it with foil, sometimes not.

It turns out really moist and great! :)

That sounds yummy! I LOVE domestic duck, but the wild duck was just too strong for me. I started smoking the wild duck after brining it in a teryaki sauce, and that's good too. Your recipe sounds much easier! LOL
