I am going to get some apples and make some pies, but i wondered if you can can the filling and use it for later? Is that even possible? If you have a recipe or have done it before or if you have any helpful tips on canning, I would LOVE to hear them!

Yes! I can apple, peach and cherry pie filling. The recipe I use has tapioca in it. I am sure it is posted here somewhere..seems like someone asks about pie filling every year..haha. If you don't find it let me know and I will post it tomorrow. It is very nice to have jars of pie filling ready to use...a quart is just right for a pie. The recipe I use makes 7 quarts...just enough to fill the canner.

I have canned pie fillings of apple, cherry, peach, raspberry, blueberry, all were great at baking time.

Claudia, you should really look at MaryJane's book...it has a whole page devoted to apple pie filling and is so informational for canning newbies (like me!). I used the search engine here and found a recipe that is nearly the same as hers to make it quicker for you if you really need to get started right away. The only difference is that MaryJane's recipe uses double the nutmeg, specifies 18# red-skinned apples and also gives extra lemon juice for pre-soaking the apples to prevent browning.

I've canned apple pie filling before. I haven't done it for a few years but I do remember not to fill the jars too full. I had problems with it wanting to boil out. What I now though is freeze it. That works well too if you have the freezer space. I just make the filling like I was making the pie--not cooked or anything just with the raw fruit. It works very well.
It's not about being perfect, but enjoying what you do. Set aside time to be creative.
