Meatloaf!!!
I made mine tonight with ground chuck, green and red peppers from the garden that I sauteed in butter with chopped onions, homemade bread chunks soaked in milk, ketchup, an egg, and salt and pepper. Put in a loaf pan, baked, and served with smashed potatoes(whole, unpeeled potatoes simmered with sliced garlic, then mashed with milk, butter and salt and pepper.
Great food for a chilly autumn night, the dogs and husband were begging for it, lol!!!
How do you make yours?

Brenda, Thats funny, I made Meatloaf tonight also. With it we had mashed taters, speckled butter bbeans, white gravy, sliced tomatoes, a piece of pepper and of cource sweet tea. Yum Yum.
I guess great minds huh!lol

Meatloaf is my specialty. People who ate meatloaf always love mine! My husband swore he hated meatloaf when we married and now it is his most requested meal!
I use a combo of ground chuck and pork and sometimes ground turky but it tends to be dry. To that I add onions, carrots, and celery for sure. If we have fresh veggies I may add mushrooms and peppers and squash but only very small amounts. It also gets an egg, about 10 saltines mashed up, home dried oregano, sage, and basil from my garden. Dried parsley, kosher salt and pepper. I also add a little but of ketchup, some worchestershire sauce and my secret ingredient - a touch of maple syrup. Just before removing from the over I mix a little brown sugar with some ketchup and smear on the top and let it cook about 10 more minutes!
My favorite sides are baked potatoes and creamed brussels sprouts.

We love meatloaf here as well but, tonight we had Chandra's Hambuger Stroganoff and it was fantastic with homemade french bread. Been cool here to so yep a great warm fall dinner.

We had a second meal of the same meatloaf last night (just two of us eating)! I made it with ground turkey, medium salsa, an egg, cracker crumbs, and ketchup. Tonight I topped it with a spoon or two of my home-made spaghetti sauce to moisten it for reheating. It was yummier the second time. Also had french fries and green salad.

I sent my hubby off to work today with a meatloaf sandwich. Who would have thought. And I agree it is better the second time. What is everyone have for dinner tonight?
