a friend gifted me with a HUGE box of gorgeous, organic fingerling potatoes. "seconds" he called them, but they look great to me. Anyway, he said they should be used in a few months, they're not really for long term storage, but there is no way I will eat them all by then. I would like to prepare them, perhaps as a casserole or some ready to eat dish I can just keep in the freezer and pull out when I need a quick dinner. Anyone have any suggestions or recipe ideas? thanks!! |

I canned potatoes this year. They were all pretty little, about 1-2 inches and less even. I left the skins on and canned them up - no problems. To test how they would eat afterword, I opened a jar, warmed them on the stove, and mashed them with butter and milk, skins and all. A little cheese on top and presto! potato casarole!

I've canned them before too. Wonderful results! I have such a small freezer. It's hard to keep casseroles there. They sound like a real treat.

What about freezing homemade fries? I do that every year when sweet potatoes go on sale.

Maggie, potatoes can also be dried in a dehydrater. Really easy to do and when you need some just hydrate them and they are ready to go again. Or make potato chips!
My hubby's a truck driver and I put dinners in the freezer for him to take with him. He does NOT like mashed potatoes frozen. They don't thaw very well. But that's his preference. Maybe as a casserole they would be better.

My dehydrator died this summer, and I can't afford to get the really nice one I want - just yet! but I will think of that for next year. :) -maggie |
