Tammy, you have re-inspired me. Last night I tried to can Toms for the first time and um, it was disastrous to say the least. I was just about ready to give up but.....I'm going to try again.

I didn't give up and got 6 quarts done last night...phew
I was much more prepared but it took me longer becasue I did not realize how long it takes to peel and core the toms. I do the scalding/ice water thing which helped but obviously I will do that part a little sooner in the game. I did have a partial quart left and that did not seal, I did not put enough liquid in it. If I use those toms this week in something they will be edible right?
I'm really proud of myself, I'm going to post some pix on my blog when I'm done with the happy dance.

Yeah Angie! You go girl!!! The tomatoes should be okay if you use them up this week. I think I've got enough tom's ready to make several quarts tomorrow. We are just now really getting them off the vine. It was so wet here in the spring we didn't get the garden planted until late. Make sure you post some pictures!

I put the jar in the freezer because there was plenty of room for expansion and you know it did not seal because the screw ring was not on straight. I know I was rushing that last one.

They look so good Angie! I made peach pie filling a while back and froze mine in canning jars. It was really easy. Now I gotta go get started on the rest of my tomatoes!
