Thanks, I have some bread books but they are packed away right now and its so hot I don't want to use the oven anymore than necessary. All of the bread recipes in my recipe box are for the oven. I just need to get organized!

Here are couple that I have:

Oatmeal Bread

1 pkg yeast
1 tsp salt
1/4 cup brown sugar
1 cup oatmeal (I use old fashioned)
3 cups bread flour
1/4 cup honey
1 tblsp vegetable oil
3/4 cup warm milk
3/4 cup warm water

Put all ingredients (in the correct order for your machine) the the bread machine. Punch the go button and then enjoy.

100% Whole-Wheat Bread

For 1½ pound loaf:

¾ cup water
¾ cup milk
2 Tablespoons canola oil
¼ cup light molasses

4 cups whole-wheat flour
3 Tablespoons gluten
1 ¾ teaspoons salt

1 Tablespoon plus ½ teaspoon bread machine yeast

For 2-pound loaf:

1-cup water
7/8-cup milk
3 Tablespoons canola oil
1/3-cup light molasses

5 cups whole-wheat flour
¼ cup gluten
2-¼ teaspoons salt

1 Tablespoon plus 1-teaspoon bread machine yeast

Place all the ingredients in the pan according to the order in the manufacturer’s instructions. Set crust on medium and program for the ‘whole wheat’ cycle; press start.

When the baking cycle ends, immediately remove the bread from the pan and place it on a rack. Let cool to room temperature before slicing.

Potato Bread (for bread machine)

For 1 ½ lb. Loaf

1-cup water
3 Tablespoons butter or margarine
1 egg
3 cups bread flour
¾ cup instant mashed potatoes (dry)
1 Tablespoon sugar
1 ½ teaspoon salt
2 ½ teaspoon yeast



For 2 lb. Loaf

1 1/3 cup water
¼ cup butter or margarine
2 eggs
4 cups bread flour
1 cup instant mashed potatoes (dry)
1 Tablespoon sugar
2-teaspoon salt
*1 ¼ teaspoon yeast


Place all ingredients in order. Select basic/white cycle. Use light crust setting. Do not use delay cycle. Remove bread from pan and cool on wire rack.


* Yeast amount for 2 lb. Loaf is correct even though it is proportionately less than amount called for in the 1-½ lb loaf recipe.

Amish White Bread-For bread machine just add liquid, sugar, oil and salt. Then add flour and yeast.
(according to your bread machine. )The loaf size is 1 1/2 lbs.

Ingredients:

1 cup warm water 1/3 cup white sugar
2 1/4 teaspoons active dry yeast
3/4 teaspoon salt
2 Tablespoons olive oil
3 cups bread flour

Directions:
1. In large bowl, dissolve the sugar in warm water, then stir in yeast. Allow to proof until yeast resembles a creamy foam. (This takes about 10 to 15 minutes in my kitchen)

2. Mix in 1 cup of flour, salt and oil. Mix in remaining flour 1/2 cup at a time. Stir until it pulls together, then knead on a lightly floured surface until smooth. Place in an oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk. (about an hour in my kitchen)

3. Punch dough down. Knead for a few minutes and shape into a loaf. Place in a well oiled 9 by 5 loaf pan. Allow to rise for 30 minutes OR until dough has risen 1 inch above top of pan.

4. Bake at 350 degrees for 30 minutes.

Sour Cream Rye Bread This recipe makes a light fluffy loaf (2 pound loaf)


1 Cup Water, lukewarm
2 teaspoons Active Dry Yeast
1 ½ tablespoons Molasses
½ cup Sour Cream (or plain yogurt)
2 Tablespoons Butter, softened
2 Tablespoons Brown Sugar
1 ½ teaspoons cocoa powder
3 cups White Flour
¾ cup Rye Flour
2 teaspoons Caraway Seeds

For bread machine: Combine according to manufacturer’s suggestion.

I use the bread machine recipe for whole wheat bread but I add a tablespoon of ground flax seed. Adds flavor, fiber and texture.
