I put up 7 quarts of tomatoes yesterday and this morning some of them have a lower head space than they started with, I am kind of worried. Should I be worried? Has this ever happened to anyone. They all have a good seal. When I took them out of the waterbath all of the tomatoes were at the top of the jar. They seem to have settled and are evening out in the jars. I used the raw pack method in there own juice.

I say as long as they are sealed go for it mine either sink or float but always the rule of thumb if when you open them they don't seem just right don't use them. Why take a chance.

Naw, don't be worried. They should be fine, if they sealed. You pack them raw and cold, then process them, and they're heated. Then when they cool down again, they look different from when they were "raw". But Diana is right- if you open them and they smell funny don't risk it.

Angie, The same thing happened to me. I used a hot pack process and they did float a lot. I checked around on the internet and found a video of a gal canning tomatoes and she had quite a bit of space on the bottoms of hers too. So, I guess if hers are ok, a you and I should be ok too!

They will be fine..happens all the time.Especailly in raw pack. If they seal and don't get weird looking or smelling they are fine. If they "spurt" when you open them..that is another bad sign, obviously. I think you will be fine.
