Can / should this be done?
If yes, how long at 10lbs pressure would apply.

I am in the process of doing 3 1/2 pint jars right now, at 10lbs pressure, for 20min. (same as pint jars)

If no, why not?

That should work, that is how I did mine. I have a smaller canner and can't do quart jars, plus it's just me and my husband so pint jars are sufficient. I put up about 12 pints a couple weeks ago. 10 lbs pressure for 20 minutes should be sufficient.

well the "1/2 pint" jars came out ok. None broke, all sealed. So we should be good to go.
