The sweet corn is starting to come in and I am looking for suggestions on freezing the ears. I have tried in the past, but when thawed for use it is mushy and watered down in flavor. I have tried wrapping each ear in plastic wrap and in waxed paper. Neither method worked well. I have also tried vaccum sealing it. That method was better, but still lost flavor. I have heard you can freeze it in the husk, but what about the bad spots and any worms. I welcome any suggestions. This is one of the few veggies I freeze and would like to serve the ears throughout the year. I have not tried stripping the ears, but assume the kernals would get even more mushy is cut off the cob.
