This is so yummy and easy. I thought that I would share it with y'all in case y'all were looking for a new way to eat up all of your squash like Barbara Kingsolver in Animal, Vegetable, Mineral.
Cut up 4 each of small squash and zucchini into 1/4 inch chunks. Thinly slice 1/2 onion and cut 4 small tomatoes into chunks. Toss them all together in a glass bowl. Put the top on and microwave it 4 minutes.
Stir it, check for desired crispness, and when it is cooked to your liking salt and pepper it and grate you favorite cheese on top. Zap it until melted and OH MY GOSH, it is so yummy!
I used extra sharp cheddar. This is such a tasty dish; I don't know why I don't make it more often. Going to have some today!
