Grated the last of the zucchini today and made several batches of
zucchini pancakes to freeze( think potato pancakes with herbs). Does anyone else do this? They are a great side dish once you have forgotten how sick you are of zucchini! I just freeze sandwich size bags of the grated and defrost as needed for casseroles, soups or more pancakes!

Went to our friends farm stand today and she acted like she was smuggling something illegal to us...peach cider! We never had it before but you can bet we will be having it again! IT WAS AWESOME!!!!
The label gave all these serving suggestions--fizz w/seltzer,, mull w/ spices, float with vanilla ice cream ! The temptation overcame my son and he had a swig in the parking lot before we left and proceeded to tell me to go back and buy my own gallon. OH! It is good!

Bramble, What kind of spices do you add to your zucchini before freezing? That sounds like a great idea!

Did you happen to get a recipe for the peach cider? That does sound very good!

Zucchini pancakes
Mix egg and flour w/ shredded zucchini.
Add herbs to taste:
grated onion (or onion pwdr if in a hurry)
garlic (optional)
fresh chopped dill and thyme
sea salt and white pepper

OR:
salt & pepper
fresh chopped oregano ,basil
chopped onion if you like
garlic (optional)

Sometimes I just cook them plain then garnish w/a sour cream
ranch dip mix and chives.Very filling!

MJ should try dehydrating these for a packet, I wonder how they'd work? Enjoy!

Bramble I have had peach nectar but never peach cider. It sounds devine. I do the same sorts of things with zuccinni. I have a recipe for a yeast bread called sunshine harvest bread that is out of this world. I thaw frozen grated zuccinni and drain out the liquid saving it for other things when I want to bake this in the winter. It is not a sweet bread so it is wonderful served with hummus spread on it or any other kind of sandwich you like.

PEACH CIDER BEVERAGE
90% Peach Juice
(Ingredients: peaches,sugar,all natural peach flavoring,citric acid, erythorbic acid to promote color retention). I don't know how well it lasts, a half gallon of it was gone by Monday night! A return trip is in order, wish I could send all of you a nice big cup! Bramble

Peaches (and apricots) my favorite fruit...then again, add raspberries, apples, pears...I guess I just love fruit! The cider sounds delicious, but I don't think I would add any sugar to it. I doubt preserving it would be a problem to solve, I don't think it would last long enough to preserve.

I bought some of that peach cider while in jersey this summer--
I just cracked open the gallon yesterday, and am baking porkchops
in it with fresh bay, cranberries, onions, and apples...I am going to put a splash of it into some absolute tonight... yey! I can only think of a thousand ways to use it--it is awesome!

You know the more often I see the zucchini and peaches topic, the better they sound mixed! I make salsa with peaches in it, and maybe zucchini and peaches might not be too bad either!

We have had zucchini pancakes, my SIL gave us the recipe. We used it when we grew zucchinis in the past. They are easy to grow and I have been thinking of growing them again.

My favorite is zucchini rigatoni, a long pasta? maybe bigger than ziti? You cut the zucchini in slices, and salt them down in layers lightly in a colander with a plate or something under it, for an hour. Fry in butter and pour over pasta and add grated parmesan cheese. They seem to have different names for pasta in the two countries.

Also, a soup with curry.

Zucchini Lentil Soup

1 carrot
1 onion
1 stick celery
1/2 oz butter
1 tab oil
8oz lentils
400g can tomatoes, (less than 1lb)
500ml water, or 2 cups about
4 zucchini
1/2 teas curry powder
2 beef stock cubes
pepper

Peel and chop onion and carrot, chop celery and zucchini, heat butter and oil in pan, add onion, celery and carrot and zucchini, cook stirring until onion is transparent, add curry powder for 1 minute or so. Add lentils, undrained tomatoes, water and stock cubes. Cover bring to boil, reduce heat, simmer covered 1 1/2 hours or until lentils are as tender as desired. Season with pepper. Serves 4.

I have half a packet of frozen cranberries to use up.

I didn't like the sound of zucchini bread until I read this thread.

Uh, does this soup recipe use big zucchini? Small zucchini?

The zucchini salsa in the MJB book is fabulous! Another great use for zucchini. I have a zucchini brownie recipe if anyone is interested...

Is there a recipe thread here where we can all add our own favorites? I am still wandering around here, sorry if it sounds like a dumb question. Just thought it would make a great cookbook!
