My husband loves drinking ginger tea because it helps with a lot of tummy issues he has. . .anyone know if I can freeze ginger? or if I can make the tea ahead and freeze it? or any info on how you like to make it would be great too! I just chop it up and boil it in water for 10 min or so. |

i freeze my ginger and then just take it out of the freezer and grate it right into the mug. i add a wee bit of honey to mine!

i freeze mine too and just grate off what I need. On another thread I also posted how to make your own candied ginger. Want me to tell you how to do that? It's SO good!
It's not about being perfect, but enjoying what you do. Set aside time to be creative.

okay, so when you grate off what you need, do you just then steep it inwater for a few minutes? |

To make candied ginger take you regular ginger root, peel it and slice it into thin slices--about a 1/4 to an 1/8 inch. Put it into a saucepan with 1 cup of water and 1 cup of sugar. Bring this to a boil and simmer for about an hour. Then take the ginger out with a slotted spoon or something like that and let it drain. Then you can also coat it with more granulated sugar and keep in a sealed container or bag. Save the syrup because it's also good with club soda. I save the peels too, freeze them and use them in tea also.
Candied ginger works the same for nausea/stomach issues. My DD has terrible motion sickness and uses it when she travels. I sometimes drop a chunk of the candied into my mint tea. Yum.
It's not about being perfect, but enjoying what you do. Set aside time to be creative.

You might wasnt to try candied ginger that is already prepared? GASP! I make Chai Tea and have always used fresh ginger. Then last week I got lazy, didn't want to peel and slice some fresh ginger and so I just put in candied ginger from Spice Islands (or some company)....and the tea tasted the best I've ever made it. I like using fresh ingredients...but this was really, really good. |

I sometimes purchase Ginger Crystals from the health food store to prepare for cold/flu season. The brand I use is Prince of Peace Ginger & Honey Crystals. They come in individual packs and can be served hot or cold. It helps so much with tummy issues and colds/sore throats.
Ginger Chews from The Ginger People are nice to have on hand or carry in your purse :)

Ginger is also a natural antinflammatory! I love the Ginger People ginger chews. Also Altoids has a ginger version. Can you tell I like ginger? |

I freeze my ginger root as well. I had a great spritzer a few days ago made with ginger beer and pomegranite juice. Wonderful concoction of good things for you! |
