Hi there, I was hoping someone can put my mind at ease....I started my "mother" on Saturday. I've been faithfully adding and stirring, and at first I saw bubbles on the top, that only lasted for a few days, now the water is separating and it looks slightly off color, not brown, but not completely clear. Should I be concerned? Once it is stirred, it is smooth and creamy, it smells good. I have been off bread for months now and I am sooooo craving a good slice of sourdough, I hope I don't have to go buy a loaf! Uck!
I used King Arthur's flour, red bag, didn't say "organic", it says unbleached and never bromated???????
I have my mother in a glass casserole dish, I cover it with a cotton kitchen towel, and then the lid, which doesn't fit real snug. Do you think she just needs more air? I've left it uncovered after stirring this morning, and I can see some bubbles forming.

Lisa, it sounds like your starter is fine. What you describe is exactly what everybody else has been seeing. If you can read through some of the big, long, 21-page thread above, it explains about the liquid. On one of the pages near the end, Mary Jane has posted additional pictures of how her starter looks, how her batter looks, and how the finished bread looks. Very helpful if you have nagging worries! |

King Arthur Organic Flour comes in a light blue bag...I think the regular flour comes in red. I usually buy the organic anyway. |
