I just returned from a Sisters on the Fly campout..."Desert Dutch Oven Diva's" was the theme in Quartzsite, AZ. Had a blast with our little vintage trailers dry camping! Anywho, we had a dutch oven cook off and I won 3rd place! (1st was a dessert & 2nd. was pulled pork). Sharing my winning pot with you! It's so easy!~Enjoy! xox
White Chicken Chili
4 boneless, skinless chicken breast 1 med. yellow onion, chopped 3 teaspoons garlic powder 2 tablespoons vegetable oil 4 cans - 15 1/2 oz. Great Northern Beans, rinsed & drained 2 cans - 14 1/2 oz. chicken broth 3 cans - 4 oz. chopped green chilies 2 teaspoons salt 2 teaspoons ground cumin 2 teapoons dried oregano 2 teaspoons pepper 1/2 teaspoon cayenne pepper 2 cups (16 oz.) sour cream 1 cup (1/2 pint) whipping cream
*Topping - Fritoes & shredded cheese
***Stove In a saucepan, saute chicken, onion & garlic powder in oil until cooked. Add beans, broth, chilies & seasonings. Bring to a boil. Reduce heat & simmer uncovered for 30 minutes stirring occasionally. Remove from heat & stir in sour cream and whipping cream. Let stand for 10 minutes for sause to thicken. Serve immediatley.
***Crockpot In a large saucepan, saute chicken, onion & garlic powder in oil until cooked. Put chicken into a crockpot & add all other ingredredients EXCEPT sour cream and whipping cream. Heat then add sour cream & whipping cream. Turn on "warm" for hours.
***Dutch Oven Same as above but heat on coals or an open fire. Bring to a boil. Take dutch oven off coals and add sour cream & whipping cream. Let stand 10 mintues before serving. I used 7 coals on bottom and 17 coals on top for about 1/2 hour and stirred a couple times.
Don't forget the Fritoes & shredded cheese! Yum!

Thanks for the recipe, it looks yummy. I prefer using a dutch oven, I tend to start recipes in crock pots too late in the day. Has anyone had luck with a pressure cooker? I'm wondering if they are worth the $.

This is a yummy chili! Mild and good! I want to buy a nice cast iron dutch oven for stove/oven cooking! I have the one for outdoors and thats real fun. I am going to go look for one on Monday!
